Macaron Shells
- 100 grams egg whites 3.5 oz
- 100 grams white granulated sugar 3.5 oz
- 96 grams almond flour 3.4 oz
- 90 grams powdered sugar 3.17 oz
- Food coloring I used red and a touch of pink

- 1 cup apples chopped small, from about 2 small apples
- 1 tablespoon lemon juice
- ½-1 tablespoon water
- ¼ cup brown sugar
- ½ teaspoon cinnamon powder
- ¼ teaspoon freshly grated nutmeg
- ½ teaspoon cornstarch
- 2 teaspoons water
Cinnamon Cream Cheese Frosting
- 85 grams cream cheese softened (3 oz, 6 tablespoons)
- 42.5 grams unsalted butter softened (1.5 oz, 3 tablespoons)
- 113 grams powdered sugar about 1 cup, 4 oz
- 1 teaspoon cinnamon powder or more to taste
- ¼ teaspoon vanilla extract

How to make apple macarons?

The shells:
1. To make these delicious macarons, start by sieving powdered sugar and almond flour into a large bowl. In a bain-marie, combine granulated sugar and egg whites. Whisk the mixture until the sugar dissolves and the mixture becomes foamy. Remove from heat and transfer the mixture to a stand mixer or use a regular one.
2. To start making the recipe, use a low speed regime when whipping the egg whites and sugar mixture. Gradually increase the speed to medium until soft peaks start to form. Then, increase the speed one more time and continue until stiff peaks form. Be careful not to overwhip the mixture.
3. Sieve the dry ingredients, including powdered sugar and almond flour, into a large bowl. Take a bain-marie and place the egg whites and granulated sugar in it. While the water simmers, whisk the whites and sugar until the sugar dissolves and the mixture becomes foamy. Once done, take the mixture off the heat and transfer it into a stand mixer or a regular one.
4. Begin whipping the mixture at a low speed and increase it gradually to medium until soft peaks start to form. Then, increase the speed once more and continue until stiff peaks form. Remember not to overwhip the mixture. Pour the sieved dry ingredients into the meringue and start folding the batter gently until you get a smooth cake-like mass that falls off the spatula like lava.
5. Next, pour half of the batter into a separate bowl if you want to make macarons of two different colors. If you want more colors, split the batter accordingly.
6. To make colorful macarons, add food coloring to each separate bowl of batter and continue folding. To check if the batter is ready, try drawing an 8 with a spatula. The batter should be smooth and not break apart, and the 8 should stay on the surface for about 20 seconds.
7. To make perfect macarons, it’s important not to overfold the batter. If it becomes runny, you’ve overfolded it.
8. Transfer the batter to separate pastry bags for each color, then place them into a bigger pastry bag. Pipe the batter onto a baking sheet to create 1-inch round shells.
9. Remember to bang the baking sheet on the countertop to remove any air bubbles.
10. Let the shells dry for approximately 30 minutes before touching them gently to check if they’re ready. Don’t skip this step, or your shells may crack!
11. Before you start baking, preheat your oven to 325°F (163°C).
12. Bake the macarons for 20 minutes and remember to rotate the tray every 5 minutes to ensure even baking.
13.You’ll know the macarons are done when they have formed “feet” and come off the baking sheet easily. But don’t remove them from the sheet just yet – let them cool completely before piping in your filling.
The apple filling
1. To make the apple filling, start by chopping the apples. Then, combine the lemon juice and water in a small saucepan, and cook on medium heat until the apples soften.
2. Add brown sugar, grated nutmeg, and cinnamon powder, and cook while stirring until the sugar dissolves.
3. Next, mix cornstarch and water and add it to the saucepan.
4. Continue cooking for an additional 1-2 minutes until the mixture thickens. Once the apple filling has reached the desired thickness, let it cool to room temperature, cover it with cling film, and store it in the fridge until ready to use.
Cinnamon Cream Cheese Frosting
1. To make cinnamon cream cheese frosting, start by sifting powdered sugar and cinnamon into a bowl.
2. In another bowl, mix softened cream cheese and butter using a stand or regular mixer until it appears soft and fluffy.
3. Add vanilla extract and mix a little more.
4. Then, turn off the mixer and add the powdered sugar-cinnamon mixture.
