1. Begin by whisking together flour, baking soda, and salt in a medium bowl.

2. Next, in the bowl of a stand mixer fitted with the paddle attachment or a large mixing bowl, combine butter and sugars. Beat on medium-low speed for about 5 minutes, or until the mixture becomes very light and fluffy.

3. Add egg and vanilla, and beat until well combined, making sure to scrape down the sides of the bowl.

4. With the mixer on low, gradually add the flour mixture, beating just until combined. Then, stir in the chocolate chips.

5. Use a 1½ tablespoon scoop to scoop the dough into balls (35g-40g), and place them on a small sheet pan or tray lined with wax or parchment paper. Freeze the dough balls for 30 minutes or refrigerate for 12 to 36 hours. The longer you chill the dough, the chewier and more flavorful the cookies will be, but they’re delicious either way!

6. When you’re ready to bake, preheat your oven to 375F (190 C°)  and line two baking sheets with parchment paper or a silicone mat.

7. Press any extra chocolate chips into the dough balls and bake for 10 to 12 minutes, or until the edges are golden brown. For best results, bake one sheet at a time. Sprinkle cookies with flaked salt, if desired, and let them cool on the pan for 5 to 10 minutes before transferring to a wire rack to finish cooling.

8. Store any leftover cookies in an airtight container for up to 5 days. Don’t forget to enjoy them with a glass of cold milk!
