- 1 cup cocoa powder 120g
- 1 3/4 cups white granulated sugar 350g
- 1/2 cup vegetable oil 120mL
- 4 eggs room temperature,large
- 2 teaspoons vanilla extract 10mL
- 2 cups all-purpose flour 240g
- 2 teaspoons baking powder 8g
- 1 teaspoon espresso powder optional
- 3/4 teaspoon salt
- 1 cup powdered sugar 100g

How to make chocolate crinkle cookies?
1. Begin by sifting the flour, baking powder, and salt into a large bowl. Whisk the dry ingredients together and set them aside.
2. Using a stand mixer fitted with a paddle attachment, beat the oil and granulated sugar together in a large mixing bowl. Scrape the sides of the bowl and mix until everything is combined.
3. Add the cocoa powder to the mixture and mix on low speed. Scrape the bowl halfway through mixing. If you’re using espresso powder, add it in now.
4. Add the eggs and vanilla and mix until well combined.
5. Pour in the flour mixture and mix on low speed. Scrape the bowl down and mix everything until well combined.
6. Cover the dough with plastic wrap and refrigerate overnight or for at least four hours.
7. Preheat the oven to 350°F. Use a small ice cream scoop or tablespoon to scoop out the chilled dough and roll it into approximately one-inch balls with your hands.
8. Roll each dough ball in powdered sugar and place it on a baking sheet lined with parchment paper, about two inches apart from each other.
9. Bake the cookies for 10-12 minutes at 350°F. The edges of the cookies should be set, but the center will finish baking out of the oven.
Tips for making chocolate cookies
- To avoid the most common mistake, measure your flour correctly. It’s best to use a scale, but if you don’t have one, fluff the flour with a spoon, sprinkle it into your measuring cup, and level it off with a knife.
- For optimal results, make the dough a day ahead, so it has enough time to set up and becomes easier to roll.
