Ingredients
For the Christmas Cake:
- 1 2/3 cups all purpose flour 213g
- 1 cup granulated sugar 200g
- 1/4 tsp baking soda 1g
- 1 tsp baking powder 3g
- 1/4 tsp salt 1g, heaping, optional
- 3/4 cup unsalted butter 176g, room temperature
- 3 egg whites
- 1/2 cup sour cream 120g
- 1 tbsp vanilla 15mL
- 1/2 cup whole milk 120mL
- 1/2 tsp peppermint extract, optional 2.5mL
For the Buttercream:
- 1.5 lb confectioners sugar 680g
- 1 lb unsalted butter 454g
- 1-2 tbsp heavy whipping cream If needed for consistency
- 1 tsp vanilla extract 5mL
- 5 drops green food coloring for the trees
For the Assembly:
- 12 ice cream cones

How to make Christmas Tree Cake?
For the Christmas Cake:
1. Preheat the oven to 340F and prepare three 6-inch pans by greasing and flouring them. Using damp cake strips on the pans will help with even baking.
2. In a large bowl, sift together the dry ingredients. In a separate bowl, beat the wet ingredients together.
3. Add the wet mixture to the dry mixture and stir until combined. Use a kitchen scale to divide the batter evenly into the cake pans.
4. Bake for 30-35 minutes or until the centers of the cakes are set and springy.
5. Let the cakes cool in the pans for about 4 minutes before turning them out onto a cooling rack to cool completely.
To make the buttercream frosting:
1. Cream the butter in a mixing bowl until smooth. Add the sugar and beat on high speed until fluffy and light.
2. Mix in the vanilla extract and a pinch of salt. If the frosting is too thick, add milk, one tablespoon at a time, until desired consistency is reached.
3. Divide the frosting into two bowls. For the colored batch, add green food coloring and mix until evenly tinted. Use as desired for your Christmas tree cake.
For the Assembly:
1. To create Christmas trees on the side of your cake, start by using a serrated knife to cut ice cream cones into different sizes. Once you have a variety of desired sizes, carefully cut them in half.
2. Next, use a number 30 tip to pipe star-shaped dollops onto the surface of the cone, starting at the bottom and working your way to the top. Place the cut cones around the side of your cake before piping.
3.Once all the trees have been piped and placed, sift confectioners’ sugar onto the top of the cake, and it’s ready to serve!
Tips for making Christmas Tree Cake
- If you’re using pans of a different size than 6-inch, adjust the recipe accordingly: double it for 8-inch pans or triple it for 9-inch pans.
- You can use whole milk yogurt instead of sour cream, which is a great substitute that won’t make a noticeable difference.
- For moist and flat layers, use cake strips. You can buy them online or create your own at home using foil and paper towels.
- To achieve a two-tone frosting effect, fill one piping bag halfway with white frosting, and another with green frosting. Place both bags in a third piping bag and snip off about an inch from each. No need for a tip.
