1. In a large bowl, sift the almond flour and powdered sugar together. Add the egg whites and mix until a paste forms. To give your macarons a lovely green hue, add food coloring and stir to distribute the color evenly.

2. Place a small saucepan over medium heat and add sugar and water to it. Let it come to a boil without stirring.

3. In the meantime, start whipping the remaining egg whites. Avoid stirring the syrup and let it bubble.

While the syrup boils, whip the remaining egg whites in a separate bowl. Be sure not to stir the syrup and let it bubble. When the syrup temperature reaches 244°F (118 C°), slowly and carefully pour it over the egg whites while whisking the eggs continuously. It’s important to pour the syrup gradually and to whisk constantly to ensure a smooth consistency.

4. To make this recipe, first whip the egg whites until stiff peaks form. Then, pour a hot syrup made of sugar and water into the egg whites while continuing to whisk.

5. In a separate bowl, sift together almond flour and powdered sugar, then fold in the meringue to create a batter. Color the batter with food coloring if desired.

6. Next, pipe the batter onto baking sheets and let the shells dry for 30 minutes before baking. Once the shells are cooked, let them cool and then sandwich them with a buttercream filling.
For best results, let the macarons chill in the fridge for at least a day before serving at room temperature. This recipe yields delicate and delicious Green Apple Macarons with a unique twist on traditional French macarons.

7. Transfer the batter into a pastry bag after it has been folded enough. The ideal consistency should be ribbon-like, falling off the spatula smoothly. Use the bag to form round shells, ensuring that they are of similar size, about 1.5 inches in diameter, and 1 inch apart from one another on a baking sheet.Transfer the batter into a pastry bag after it has been folded enough. Use the bag to form round shells, ensuring that they are of similar size, about 1.5 inches in diameter, and 1 inch apart from one another on a baking sheet.

8. To ensure the perfect macarons, it’s important to remove any air from the batter. After piping the batter onto a baking sheet, tap the sheet on the counter a few times. This will flatten the shells and help release any air bubbles. If any air bubbles remain, gently pop them with a toothpick.

9. Allow the shells to dry and form a skin for about 15-20 minutes. It’s important to work quickly during this step, as the shells will start forming skins.

10. Preheat the oven to 285°F (140°C) while the macaron shells dry for 15-20 minutes.

11. Once the shells form a skin that’s dry to the touch, bake them for 10 minutes at 285°F (140°C).

12. Reduce the oven temperature to 230°F (110°C) and bake for another 8 minutes.

13. Let the macaron shells cool completely before removing them from the wax paper.

The apple filling

1. To make the apple filling, start by cutting the apples into small 5mm cubes, ensuring to remove any seeds.

2. In a saucepan, combine the apple cubes with granulated sugar and lemon juice. Allow the mixture to simmer for approximately 10 minutes.

3. Next, mix the pectin with sugar and add it to the apple syrup, stirring well to combine. Set the mixture aside to cool before using it as a filling for your macarons.

The buttercream

1. To make this buttercream, start by cooking a sugar syrup in a small saucepan with 15g water and 48g sugar on medium heat.

2. While the syrup is cooking, beat egg whites and 5g of sugar on medium speed.

3. When the syrup reaches 244°F (118 C°), slowly pour it into the egg whites with the mixer running. Continue beating until the meringue cools down.

4. Next, add the butter one piece at a time, ensuring it is fully incorporated and smooth before adding the next piece.

5. Mix the buttercream until it’s fully incorporated, and smooth.

Assemble

1. To make Green Apple Macarons, fill a piping bag with buttercream and pipe a ring around the outside edge of half of the macaron shells.

2. Spoon the apple filling into the middle of each circle. Pick two shells of similar size and sandwich them together. Repeat with the remaining shells.

3. Store the macarons in a tightly sealed container and refrigerate for a day or two. When ready to serve, let them come to room temperature.
