How to make Mocha Cake?

For the Batter:

1. Preheat your oven to 350F and prepare three 9-inch cake pans by greasing them with butter and dusting them with flour. To ensure an even bake, I highly recommend using cake strips.

2. In the bowl of a stand mixer, sift together the dry ingredients, including the sugar, and whisk to combine. In a separate large bowl, whisk together the wet ingredients.

3. Add the wet ingredients to the dry ingredients and whisk to combine. Once combined, mix on medium speed (level 2) for two minutes.

4. Distribute the batter evenly among the three pans and bake for approximately 35-40 minutes at 350°F, or until a toothpick inserted into the center comes out clean. I suggest rotating the pans halfway through the baking time for even browning. After baking, let the cakes cool in the pans for 5 minutes before inverting them onto wire racks to cool completely.

For the Mocha Buttercream:

1. In a bowl, sift together the confectioners’ sugar, salt, cocoa powder, and espresso powder.

2. Using a paddle attachment in a stand mixer, whip the butter for approximately 5 minutes until light and fluffy.

3. Beat in the sugar mixture gradually, allowing it to incorporate into the butter.

4. Add vanilla extract and slowly drizzle in the cream while continuing to beat until you reach the desired consistency. If you prefer a stronger espresso flavor in the buttercream, feel free to add more espresso powder to taste!

For the Ganache:

1. Warm the cream until hot but not boiling, then pour it over the chocolate. Let it sit for a few minutes to allow the chocolate to melt, and then whisk the mixture together until smooth. If there are any small bits of unmelted chocolate, you can microwave the ganache for 10 seconds at half power and whisk again until fully combined.

For the assembly:

1. Pipe a layer of mocha buttercream onto the first cake layer, followed by a swirl of ganache and a sprinkle of chopped espresso beans.

2. Place the second cake layer on top and repeat the process.

3. Finally, add the third cake layer and cover the entire cake with mocha buttercream, smoothing it out using an offset spatula.

4. Drizzle ganache over the top of the cake, ensuring it is evenly distributed, and allow it to set.

5. To add a decorative touch, pipe dollops of buttercream along the edge of the cake using a large closed star tip and place a chocolate-covered espresso bean on top of each dollop.

Pipe a layer of mocha buttercream onto the first cake layer, followed by a swirl of ganache and a sprinkle of chopped espresso beans.

For the assembly:

  • If you prefer, you can use sour cream instead of whole milk yogurt in this recipe. I’ve tried both options, and they yield equally delicious results.

  • For perfectly level and moist cake layers, I highly recommend using cake strips.

  • For an added crunch and intense chocolate flavor, consider incorporating cacao nibs into the batter. These pure chocolate bits add a delightful texture and are packed with antioxidants, offering a unique twist to your mocha cake experience.
