For the Crust:
- 16 (180 g) graham cracker
- 6 tbsp (90 g) unsalted butter
- 2 tbsp sugar
- ⅛ tsp salt
For the New York Cheesecake:
- 1 200 g Philadelphia cream cheese (room temp.)
- 100 mL heavy cream (room temp.)
- 200 g sugar
- 6 eggs (room temp.)
- ½ lemon juice
- 70 g of corn starch
- ½ tsp salt
- 4 tsp vanilla extract
The top layer of the cake:
- 300 g sour cream (30% fat)
- 1½ tbsp powdered sugar

How to make New York Cheesecake?

American New York Cheesecake Crust:
1. Prepare a round 9-inch (24 cm) springform pan by lining it with parchment paper.
2. Preheat the oven to 320°F (160°C).
3. Melt the butter over low heat.
4. Grind the graham crackers to fine crumbs using a grinder.
5. Pour melted butter into crushed graham crackers, add sugar and salt. Mix thoroughly. Line the bottom of the baking dish with the mixture. Press firmly. Bake for about 15 minutes.
6. After removing the crust from the oven, preheat the oven to 460°F (240°C).
American New York Cheesecake:
1. Put cream cheese in a bowl, add heavy cream, add sugar, beat in eggs, add squeezed lemon juice, add cornstarch and salt, and mix everything well until it has a smooth and even texture. Finally, add the vanilla extract.
2. The New York Cheesecake will be baked in a water bath. Take the baking dish that contains the baked cake base and wrap it in aluminum foil. This will protect the cake from water. Place the mold in a larger container filled with warm water.
3. Pour the resulting cheese mixture onto the already baked cake base and place it in a preheated oven 460°F (240°C). Bake for 10 minutes, then reduce the temperature to 212°F (100°C) and bake for 1 hour and 20 minutes.
The top layer of the cake:
1. Mix the sour cream with powdered sugar and spread it evenly on the baked cheesecake. Bake for another 10 minutes at the same temperature.
2. After the cheesecake is baked, turn off the oven and let it cool slightly. Remove the cake only when it has completely cooled.
3. Place the New York Cheesecake in the refrigerator for 8 hours.
