How to make buttercream frosting?

Buttercream frosting is a simple and classic way to decorate your cakes and cupcakes. It is velvety, creamy, and utterly delicious.


For the cupcakes:

  • 1 tbsp vanilla 15 mL
  • 1 lb confectioner’s sugar 454 g
  • 1 cup unsalted butter 225 g, room temperature
  • 3 tbsp heavy whipping cream 45 mL
  • 1/2 tsp salt

How to make buttercream frosting full recipe

Buttercream is the easiest way to decorate your cakes and cupcakes. It comes in different colors and makes any baked item look beautiful, vibrant, and visually appealing. There are several buttercream recipes, but this recipe is simply Classic and effortless.

And the best part is, we have provided tips to guide you step by step into making the creamiest, velvety and delicious buttercream of your entire baking journey. Be prepared to indulge in the experience of your life!

Part one. For the Frosting

First of all, in a standing mixer bowl, add butter at room temperature. Cream the butter using a paddle attachment for 3 minutes until it is smooth. Scrap the sides of the bowl and whip for 1 more minute.

Tip: To know the butter is at room temperature, press it down, and it will yield to your touch. You can see a small dent in its surface. If you want your buttercream to be lighter, choose the butter that has the lightest color. The yellower the butter is, the more off-white the buttercream will be.

Tip: When using a standing mixer, use the paddle attachment instead of the whisking attachment. Whisk attachment will add too much air into the frosting, making it frothy. As a result, you won’t get the creamy consistency you want. Also, it won’t be easy to pipe and use for decoration.

Sift the confectioners’ sugar and add half of the sifted sugar to the creamed butter. Start the mixer at low and beat for about 30 seconds. Increase the speed gradually and continue to beat for 2 minutes or so. 

Tip: Sifting isn’t necessary, but it helps remove tiny lumps for sugar which can otherwise stick in the piping nozzle and make decoration impossible.

Tip: You can adjust the quantity of sugar as per your liking. For instance, if you want the buttercream to be more buttery, add less sugar and if you want it to be stiffer, add more sugar.

Stop the mixer now. The mixture will be crumbly at this point. Add vanilla extract in it and start beating again for about 3 to 5 minutes or until it is creamy and soft peaks start to form. 

Tip: Cover the mixer with a kitchen towel to prevent sugar splatter. Also, use a high-quality food-grade vanilla extract for maximum flavor. You can use vanilla bean paste as well.

Add the remaining sugar into the mixture, scrape the sides of the bowl and start beating the mixer again. Add a tablespoon of heavy cream at a time while the mixer is running to get the required consistency of the buttercream. Whisk it at medium speed for about a minute more. 

Tip: You can add more or less heavy cream according to the consistency you desire.  Also, always use a fresh spoon for tasting.

Once it is done, check the consistency of the buttercream by piping it. If you don’t see perfectly stiff peaks forming, you can beat it at low speed and add a little bit of heavy cream until the buttercream is glossy and stiff peaks start to form.

Part two. Using the buttercream frosting.

You can pipe it in a plastic piping bag with your favorite tip and decorate your cupcakes or cakes. Moreover, you can also divide it into small batches, add food color in each batch and mix until you get the color you desire. Use these colored buttercream batches to decorate your cakes and cupcakes.

Last – Storing the homemade buttercream frosting.

If you want to store your homemade buttercream frosting, place it in an air-tight container and refrigerate. It will last for up to a week. So, you can give it a quick whisk or let it sit for some time and use it the way you want.
