For the Cupcakes:

1. To prepare the cupcakes, preheat your oven to 350 degrees F (180 degrees C) and line a muffin tin with cupcake papers.

2. In a small bowl or cup, combine the milk, vanilla, and sour cream, and set the mixture aside. Sift the dry ingredients into a medium-sized bowl.

3. Using an electric mixer or hand mixer, beat the butter until smooth and creamy. Add the sugar and continue beating until the mixture becomes light and fluffy, which should take around three minutes. Scrape the sides of the bowl as necessary. Gradually add the eggs, one at a time, mixing well after each addition.

4. Add the milk/sour cream mixture and flour mixtures to the butter mixture in three parts, beginning and ending with the flour mixture. Mix until the ingredients are combined, taking care not to overbeat.

5. Evenly distribute the batter among the cupcake papers in the tin. Bake for roughly 20 minutes or until a toothpick inserted into the center of the cupcakes comes out clean, and the tops of the cupcakes spring back when lightly pressed.

For the Cherries:

1. In a small saucepan, combine the cherries, sugar, water, and lemon juice. Bring the mixture to a boil, then reduce the heat to a simmer. Allow the ingredients to cook for approximately five minutes or until the liquid has reduced and the cherries have slightly softened.

For the Buttercream:

1. In a mixing bowl, beat the butter until it becomes light and fluffy. Add the confectioners’ sugar, salt, and vanilla, and continue mixing until all ingredients are well combined. Gradually add small amounts of cream until the desired consistency is achieved.

For the Asembly:

1. To create the filling, core the cupcakes using a cupcake corer or by cutting a small circle out with a knife. Remove the center of the cupcake and save the top for later.

2. Spread some buttercream into the hollowed-out cupcake using a knife. Add a cherry to the center and then place the cake cap back on top.

4. After filling the cupcakes, use a piping bag to add buttercream on top.

5. Finally, drizzle the cherry reduction over the cupcakes and add a cherry on top along with some more reduction.

Tips for making Chocolate cherry cupcakes

  • To ensure the perfect texture of your cupcakes, make sure to measure your flour correctly. Over-measuring is a common mistake, so it’s best to use a scale if you have one. If not, fluff the flour with a spoon, sprinkle it into a measuring cup, and level it off with a knife.
  • If you don’t have sour cream on hand, you can use whole milk yogurt as a substitute.
  • For a more complex flavor, try adding a few tablespoons of cherry liqueur to your reduction. You can either burn off the alcohol while the mixture reduces, or add it off heat for an extra kick.
  • An ice cream scoop can make adding the batter to the cupcake papers a breeze, with less mess and even distribution.
  • While I prefer using Dutch-processed cocoa for a fudgier, less acidic cupcake, natural cocoa will work just as well.
