- 2¼ cup (280 g) flour
- ½ tsp baking soda
- ½ cup (100 g) powdered sugar

Lemon cirkle cookies:
1. Melt the butter over low heat.
2. Mix sugar, grated lemon peel, and salt in a large bowl. Add the melted butter, lemon juice, beat in the eggs, add vanilla, and beat everything well until smooth.
3. In another bowl, mix the flour with the baking soda. Add the flour mixture to the sugar mixture and mix until the ingredients are combined. Wrap the dough in cling film and refrigerate for at least 4 hours or overnight.
4. Preheat the oven to 350°F / 175°C and line a tray with parchment paper. Add powdered sugar to a small bowl.
5. Using a large spoon, scoop out 12 balls from the chilled cookie dough. Shape each piece of dough into smooth balls by rolling them liberally in powdered sugar.
6. Place the balls of dough 2-3 cm apart on the baking sheet.
7. Place the lemon cookies in the preheated oven and bake for 12-14 minutes, or until the tops crack and the bottom edges begin to brown.
8. Once the cookies are baked, let them cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely. Repeat the entire baking process with the remaining dough.
