1. In a smaller saucepan, place the butter, pour in the milk, add water, and sift in the flour. Stir continuously and heat the mixture over low heat until the butter melts and the mixture thickens. Remove the saucepan from the heat and set it aside for further use.

For the Pistachio Cinnamon Roll Dough:

1. Pour the milk into a larger bowl and add the butter. Heat over low heat until the butter melts and combines with the milk.

2. Once the ingredients are combined, add the flour, dry yeast, salt, lightly beaten room temperature eggs, and mix well until it forms a smooth batter. Pour in the prepared mixing mixture.

3. If it becomes difficult to mix, transfer the cinnamon roll dough to a floured surface and knead until the dough becomes smooth. The dough will be slightly sticky. If it sticks too much to your hands, sprinkle in a little flour (the less flour you use, the softer the pistachio cinnamon rolls will be).

4. Transfer the dough to a larger bowl greased with butter, place it in a warm spot, and let the cinnamon roll dough rise for about 1 hour.

While the dough is rising, we can prepare the cinnamon roll filling.

1. Let’s prepare the pistachios: preheat the oven to 180°C and place the pistachios on a baking sheet lined with parchment paper. Roast the nuts in the oven until they turn golden or light brown and release a wonderful nutty aroma. This should take about 6–10 minutes. Once roasted, remove them from the oven and let them cool completely. Crush the nuts into a fine texture, and set aside the prepared pistachios for later use.

2. Let’s prepare the cinnamon roll filling mixture: In a small bowl, mix sugar, finely grated lemon zest, cardamom, and salt. Reserve ¼ cup of this mixture to sprinkle over the baked rolls later. In another bowl, combine the remaining sugar mixture with finely chopped pistachios to ensure they are well mixed. Set aside this pistachio and sugar mixture for later use.

3. In a small saucepan over low heat, melt the butter with honey. Stir until the butter is completely melted and the ingredients are combined. Remove the saucepan from the heat and set it aside for later use.

4. Roll out the cinnamon roll dough into a rectangular shape on a surface lightly dusted with flour.

5. On the rolled-out dough, evenly spread the mixture of butter and honey, and on top of it, spread the prepared cinnamon roll filling mixture (reserve ¼ cup of this mixture for later use). Sprinkle the crushed nuts evenly.

6. Carefully and evenly roll the dough into a log, then cut it into slices about 5 cm wide.

7. Arrange the slices on a baking sheet lined with parchment paper, leaving spaces between the cinnamon rolls. Allow the dough to rise once again for 30 minutes in a warm place.

8. Preheat the oven to 180 °C.

9. Place the pistachio cinnamon rolls in the preheated oven and bake for 20–25 minutes or until they acquire a lightly golden hue.

10. After removing the cinnamon rolls from the oven, spread the remaining ¼ cup of the mixture on top.
