How to make Sticky Buns?

1. Begin by warming the milk on the stovetop until it reaches a gentle warmth.

2. In a freestanding mixer equipped with a dough hook, combine the flour, sugar, yeast, cinnamon, and salt. Create a well in the center and pour in the eggs and milk. Mix on a slow speed until a rough dough forms, then increase to medium speed to bring the ingredients together into a cohesive dough.

3. With the mixer running on medium, gradually add the butter, one knob at a time, ensuring each piece is fully incorporated before adding more. Continue kneading the dough for an additional 4 minutes.

4. Place the dough in a bowl, cover it with cling film, and let it prove for 1 hour 30 minutes, or until it has doubled in size.

5. While waiting for the dough to prove, prepare a greased 25cm x 35cm deep baking dish. For the glaze, melt the butter and stir in the remaining ingredients. Bring the mixture to a boil, then reduce the heat and let it simmer for 3-4 minutes. Pour half of the glaze into the prepared baking dish, ensuring it is spread out evenly.

6. Once the dough has almost doubled in size, whisk together all the filling ingredients.

7. On a lightly floured surface, roll out the dough to a size of 35cm x 40cm, ensuring to trim the edges. Spread the filling evenly over the rolled-out dough and sprinkle half of the pecans on top.

8. Starting from the long edge, tightly roll up the dough into a log. Trim the ends and slice the log into 15 rolls, cutting it into 3 pieces and then dividing each piece into 5. Arrange the rolls in the greased baking dish, placing them cut-side-up in 3 rows of 5 buns.

9. Cover the dish with cling film and let the buns rise for 45-50 minutes.

10. Preheat your oven to 180˚C (gas mark 4). Remove the cling film from the baking dish and place it in the oven. Bake the sticky buns for 30 minutes until golden and cooked through.

11. Allow the buns to cool in the dish for 5 minutes, then carefully flip them onto a wire rack. Give the tin a gentle tap to release the buns from the caramel.

12. Flip the buns over and warm the reserved glaze. Brush or drizzle the glaze over the top of the buns and sprinkle them with the remaining pecans. These delicious sticky pecan buns can be served warm or at room temperature. Enjoy!
