How to make Vegan Raspberry Sweet Rolls?
For the Sweet Dough:
1. In a large bowl or the bowl of a stand mixer, combine warm milk, 1 teaspoon of sugar, and yeast. Allow it to sit for 10 minutes until the yeast creates foam. If there’s no foam, it’s time to replace the yeast.
2. Once the yeast has foamed, turn on the stand mixer to low speed and gradually add the remaining sugar, oil, and vanilla. Add 1 cup (130 g) of flour and mix until well combined.
3. Then, add the salt and the remaining flour, one cup at a time. Mix on medium-low speed for about 5-8 minutes until the dough becomes smooth and elastic, slightly sticky to the touch. If the dough is overly sticky, add a few tablespoons of flour and continue mixing. The goal is for the dough to be tacky but not excessively dry. Remember, it’s better to have a slightly wetter dough for better results.
4. For those mixing the dough by hand, once the yeast has foamed, add sugar, oil, vanilla, and 1 cup (130 g) of flour to the large bowl. Use a spoon to mix and incorporate the salt and the remaining flour. When it becomes challenging to mix with the spoon, transfer the dough onto a lightly oiled surface and knead it for approximately 10 minutes.
5. Keep your hands lightly oiled to prevent sticking. If the dough is too sticky, allow it to rest for up to 20 minutes to hydrate the flour.
6. Shape the dough into a tight ball and lightly oil the bowl used for mixing. Place the dough in the bowl, turning it once to ensure the top is lightly oiled as well.
7. Cover the bowl with a clean towel, foil, or plastic wrap, and let it rise in a warm spot for 1.5 to 2 hours, or until it has roughly doubled in size.
For the Raspberry Filling:
1. In a bowl, mix together the frozen raspberries, sugar, cornstarch, and lemon zest. Return the mixture to the freezer until it is ready to be added over the dough.
To Assemble the Rolls:
1. Preheat your oven to 350°F (177°C/gas mark 4). Prepare a 13 x 9-inch (33 x 23 cm) baking dish or a 12-inch (31 cm) skillet by lining it with parchment paper or lightly greasing it.
2. Prepare your work surface for rolling out the dough by lightly oiling it and the rolling pin. Roll out the dough into a rectangle measuring approximately 20 x 14 inches (51 x 35 cm). Evenly spread the vegan butter across the dough, followed by the raspberry preserves. Sprinkle the frozen raspberry mixture evenly over the preserves.
3. Starting with the long end closest to you, roll the dough tightly and evenly away from you. Gently push the roll so that the seam is facing down. Using a sharp knife, cut the roll into 12 equal pieces. Arrange the rolls in the prepared baking dish, placing them cut side down. Lightly cover the rolls with a lint-free kitchen towel, foil, or plastic wrap and allow them to rest for about 30 minutes or until the oven is preheated (note that these rolls may not rise as much before baking due to the chilled dough filled with frozen fruit).
4. Remove the cover from the rolls and carefully place them in the preheated oven. Bake for 28-32 minutes or until the tops turn golden and the rolls sound slightly hollow when tapped or when a toothpick inserted into the middle comes out clean. If you have a food thermometer, the interior should register between 190-200°F (88-93°C). Allow the rolls to cool for 20 minutes, then either spread them with vanilla glaze or enjoy them as they are. Once the rolls have reached room temperature, cover them with plastic wrap or transfer them to an airtight container. They can be stored at room temperature for a couple of days or in the refrigerator for about 5 days.
For the Vanilla Glaze:
1. In a medium bowl, beat the vegan butter until creamy. Gradually add the confectioners’ sugar, ½ cup (106 g) at a time, and mix until well incorporated. Add the vanilla extract and 2 tablespoons (30 ml) of plant-based milk. Continue beating until the mixture becomes smooth and free of lumps. If the glaze is too thick, add additional plant-based milk, 1 tablespoon (15 ml) at a time, until the desired consistency is achieved. Spread the glaze evenly over the rolls, ensuring they are fully coated.
