How to make mini cannelés de bordeaux?

Ingredients

Here’s what you gonna need to make 16 mini caneles:

  • 2 cups (500 ml) milk
  • 3 1/2 tablespoons (50 grams) butter
  • 1 teaspoon vanilla extract
  • 3/4 cup (100 grams) all-purpose white flour
  • 1 1/4 cups (250 grams) white granulated sugar
  • Pinch of salt
  • 2 whole large eggs + 2 egg yolks
  • Extra butter for the mold

Step No. 1

Prepare the batter.

Heat the milk and the butter in a saucepan. Let the butter melt, and keep watching not to let the mixture boil.

Step No. 2

While the milk-butter is on the heat, sieve the flour into a separate bowl.

Step No. 3

Pour the sugar and the salt into the flour, mix it.

Step No. 4

Add the eggs and the yolks into the flour, sugar, and salt mixture you combined earlier. Stir it until you get a smooth mass.

Step No. 5

Add vanilla extract to the heated milk-butter mixture and remove it from the stove to cool down.

Step No. 6

Pour the milk mixture into the flour and egg mixture slowly, and stir in between not to cook the egg yolk.

Step No. 7

Place the batter in a fridge for 1–12 hours after covering the bowl with a stretch film or transferring the mass into an airtight container.

Step No. 8

Prepare the molds by greasing them with melted butter. If you are using silicone molds, place them in a fridge for 30 mins after greasing so that the butter sticks to the mold walls.

Tip: put the silicone molds onto the baking rack before the greasing.

Step No. 9

Fill in the molds.

Pour the batter into the molds, fill 3/4 of each cup.

Step No. 10

Preheat the oven to 500ºF (260ºC) and bake for 10–15 mins.

Step No. 11

Reduce the temperature to 360ºF (180ºC) and bake for another 1 hour until the crust seems caramelized enough.

Take out the Canelés from the oven, remove the molds while the Canelés are still hot. Serve cooled.
